Summit Academy gives students cooking experience in 2009

Students under Chris Graczyk’s watch in 2009 performed various kitchen duties at Summit Academy. Some washed dishes, wiped down the salad bar, served drinks or did prep work.

Graczyk cares about them because he was once one of them — a troubled youth who ran afoul of the law in need of positive direction.

Graczyk and his staff of about 25 students produced some 1,600 covered meals per day, feeding more than 500 people and serving breakfast, lunch, dinner and an evening snack.

Chase Safreet, a Summit Academy student and food service worker at the time, said he was getting his GED certificate, and wanted to get into culinary arts in college.

“Being around the kitchen has given me appreciation for what a chef does. It's what I want to do,” Safreet said.
