LIMONCELLO BARS
Crust:
1 cup melted unsalted butter (2 sticks)
2 cups all-purpose flour
1/2 cup powdered sugar
Combine crust ingredients and press into 9”x13” pan, which is prepared with cooking spray.
Bake the crust 15-18 minutes at 350 degrees.

Filling:
Combine
4 eggs — slightly beaten
Zest of one lemon
4 tablespoons fresh lemon juice
(If not enough juice in lemon, make up the
difference with Limoncello)
2 tablespoons Limoncello
2 cups granulated sugar
1 tablespoon all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
When crust is done baking, pour filling over the crust and return to the 350-degree oven and bake another 25-30 minutes - until the top JUST BEGINS to SLIGHTLY brown in some spots.
Remove from oven and let cool completely.
Sprinkle with powdered sugar when cooled.
Cut into squares.
